greetings! the past couple months i've been making my own hummus. it turns out great, but after the 3rd or 4th batch i'd like to start experimenting with flavors. here's the recipe i use:

3 cans organic chick peas, shelled
3/4 cup chick pea juice (from the can)
1 lemon juiced
3 large cloves sauteed garlic
4 1/2 tbsp tahini
7 tbsp extra virgin olive oil
1tsp cumin
salt and pepper to taste


i pretty much just fuck them all together in a food processor at once.

my question to you guys is does anybody else make their own hummus? is there any variation to the standard recipe you prefer for better texture, flavor, etc? any special flavors or additional ingredients you feel like sharing?

I make hummus pretty often. The hummus recipe i like is similar but uses some different amounts of ingredients.

My recipe is written out for a 1 can batch and i just multiply the ingredients for larger batches.

One 16oz can chickpeas (drained with juices saved)
1/4 cup tahini. -About three times more tahini than your recipe.
1/4 tsp paprika
6 dashes of black pepper
1 tbsp EVOO. -About half the amount of EVOO as your recipe.
1/2 tsp ground cumin. -So you might try adding an extra 1/2 tsp of cumin.
2 tbsp lemon juice
1 clove raw garlic, not sauteed.
1/2 tsp sea salt

Like i said though, this is for a 1 can recipe. So multiply all those measurements by 3 if you're using 3 cans of chickpeas.
If you try using more tahini like i do, you may want to decrease the olive oil since tahini is really oily.

When i make it i first blend everything together except for the chickpea water. i then gradually add the water in until i get the desired consistency. I like my hummus thicker than the store bought kind. As for adding extra stuff, you can really add anything you want, just experiment with your favorite flavors. Sometimes i add fresh baby spinach or a little mild chilli pepper. I've tried adding various herbs and spices with mixed results. More often than not, i just make the standard recipe since its what i like.

thanks for the response! i'm going to try adding more tahini and using less olive oil in my next batch, i'll let ya know how it turns out. i'm largely italian so to me there's no such thing as too much olive oil though :lol: the first time i made hummus i put raw garlic in, but found it to be overpowering, that's why i started sauteing it

as far as flavors i've always loved red pepper store bought hummus, i assume all i'd need to do is add some roasted red peppers for that, maybe i'll try that too.

Saw some with edemame in it. Would be cool to try out. Love Me some hummus got some jalapeño cilantro in the refrigerator

I don't why you would want to use the slimy/starchy water inside the can ...for me when i used canned peas you need to rinse them under water to remove unwanted starch.

I usually put the lemon zest also i my hummus. And im quite generous with lemon juice, tahini and olive oil.

jalapeno cilantro... sounds awesome

so i tried using extra tahini with my last batch. it came out great, the sesame flavor really stands out to a point where i feel like it should, though i found it changed the texture of the hummus quite a bit, a little too thick for my taste, so i used plenty of olive oil to balance it out

My libanese buddy use to make hummus all the time and he never put the can liquid. Not strange.
