I got a pizza stone and I've made some pizzas with a store-bought dough but I want to try making it from scratch. I like to make the crust pretty thin and I want it to get nice and crispy. The dough I bought at the store takes too long to cook and the pizza toppings end up burning before the dough got nice and golden.

I've tried a few recipes and had mixed results. I think the best recipes use bread flour. Bread flour makes the dough more elastic and it seems to make the crust more bubbly and crispy. All-purpose flour makes a more dense/chewy crust and isn't as good imo.

with a pizza stone, make sure you're preheating it long enough. a lot of recipes I've seen recommend preheating your pizza stone for a full hour before using it. i dont think you have to wait that long but its probably depends on your stone and what temperature you preheat at. If the stone isn't hot enough, the dough isn't going to cook evenly.

3 1/2 to 4 cups bread flour, plus more for rolling
1 teaspoon sugar
1 envelope instant dry yeast
2 teaspoons kosher salt
1/2 teaspoon all seasoning
1 1/2 cups water, 110 degrees F
2 tablespoons olive oil, plus 2 teaspoons

combine the bread flour, sugar, yeast, all seasoning and kosher salt in the bowl and mix... While the mixing add the water and 2 tablespoons of the oil and beat until the dough forms into a ball, if the dough is sticky add a little flour, until the dough comes together in a solid ball. If the dough is too dry do the same as you did w/ flour but w/ water.

Put the dough on the counter (lightly flour the counter first w/ bread flour) and kneed until soft

Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

Once that's down spread it out into a pizza shape do this on a lightly oiled pan

used contadina brand pizza sauce

throw part skim mozz on there + your toppings

the fresher the toppings the better

after it's made lightly brush olive oil on the crust (the top part that you eat in the end) and BOOM you are good to go!

got that from funion a while back.

Gonna have to try this. I've tried some recipes before and the dough was trash. Ate* the cheese and sauce. Threw the crust out lol...
