so i heard that ramsay puts eggs in already-boiling water for 4 minutes to make soft boiled eggs. i wanted to make medium boiled eggs, so i left them in for 5-6 minutes, then iced em and put em in the fridge last night. i tried two this morning and they're still runny. can i put them back on the stove and boil a few minutes? or is that bad since i already boiled them once?

when you boil them, you are cross-linking the proteins. re-boiling them should just finish the job :)

just kidding.

when i cook eggs like that i add them to boiling water then put a lid on it and remove the pan from the heat. then i just let them sit there for 10 minutes or so in the hot water. they come out evenly cooked and perfect. ever seen a hard boiled egg that had a green/dark yellow look to the outside edge of the yoke? it means somebody boiled the snot out of it and overcooked it.
