So I recently got a jar of red curry. I boiled sweet and russet potatoes until soft(roughly 1 inch cubes).
I also steamed broccoli and red bell pepper. I mixed it all in with the jar of curry sauce, and kept it warm for a bit, and let it absorb the sauce up.

IT WAS FUCKING DELICIOUS

Does anybody else cook with curry? What vegetables go good with it?
Also, does anybody know a good spicy curry? I can never find ones that are very spicy. Is green curry good?

I love Thai curries, you should experiment with coconut milk, and if you want it more spicy just add sriracha to taste. I always garnish them with lime wedges on the side, and Thai basil and cilantro chopped on top of the curry. Chopped peanuts are a good garnish too. Spinach goes well with them, carrots are good, any Asian vegetable would work well. Meat is a good addition too. I usually use cubed boneless skinless chicken thighs.

I like chopped peanuts on noodle dishes, and lime with things such as Pad Thai is omg so good.
I just started trying cooking with curry, and it was amazing, so I wanna try more, so thanks for the tips!
