how do you define "healthy"? organic? avoiding trans fat? high in protein? stevia instead of sugar? complex carbs instead of simple carbs? fruit instead of sugar? low sodium? etc etc
http://www.youtube.com/user/leanbodylifestylei tend to like him for making simple dishes and using stevia / whole grains.
i also watch chef john (http://www.youtube.com/user/foodwishes) and laura in the kitchen (http://www.youtube.com/user/LauraVitalesKitchen). though they're just aimed at making good food fresh, if that's all you want from "healthy"
