I make cake weekly at work, but this week i decided to try something a lil different with some of it. i started with yellow cake (from a mix). i made a couple small ones in addition to the large ones for work. i trimmed the rounded tops then flipped em over and cut em in half horizontally. in the middle went a sauce made from caramelized orange and wasabi. then i topped them with ganache. i did this once before, but last time i made the mistake of adding the wasabi while cooking the sauce, which killed the flavor. this time i made the sauce first, then added the wasabi while it was still warm, but not too hot. this gave it a mild heat and touch of wasabi flavor, in addition to the orange. everyone who tasted it said it was awesome. i also didnt get a good pic last time. did better this time.

Whats up with the foam plates honestly?
Edit: lol u even take time to make decent coulis decorations, but on foam plates it just look ridiculous sorry.

how do you caramelize an orange and make into sauce? just heat and blend?

Similar to something like caramelized peaches - melt butter then add the Orange pieces and top with sugar. Heat and toss until cooked through and caramelized. Puree and strain.

i know, really. if serving to a customer, the plate matters. if practicing or trying stuff out, the plate doesnt matter all that much. (though itll look a bit different on different plates...)

looks like a Joe Louis and way too much sauce imo...plus I agree with the foam plate thing. you obviously enjoy trying new stuff and making effort into making it look "good", go to the dollar store or Ikea or something buy a couple ceramic plates for a couple bucks and keep them at work
