Does anyone know how to make those Fried Spring Chicken or Barbeque Chicken that are sold on Western Food Outlets?

I dunno marinade in sauce overnight from fresh wings, put in oven, baste sauce in the end

Comes out as saucy, or crispy, always moist meat
