Should I age my freshly-made pesto before use?
I'm wondering if this may help the olive oil more fully extract the flavor out of the basil, pine nuts and garlic?

It would for sure taste better if you let it sit overnight, but I don't think it will get too much better after that.

I agree with this. The day after is always better but after that it won't change.
