It starts with my basic ingredients

2 mushrooms
1 onion peeled and diced
6 cherry tomatos
1/4 a courgette
aubergine
golden breadcrumbs
Cheddar cheese (supposed to be mozzarella but I improvised)
Seasoning (I held back on the salt)

So I split the aubergine in half and scooped out the insides and put it in a bowl

Chopped up my veggies

and roasted the aubergines for 20 mins (drizzled in a lil olive oil)
and fried off ma veggies

I then proceeded to fill my aubergine boaties and sprinkle the breadcrumbs and cheese on top

Baked in the oven for another 15 mins (give or take)
had some Wine and now im stuffing my face

looks pretty good. you should try it with asian eggplants. i made a babaganoush the other day from them which was great.
