My pecan pie recipe is my take on recipes from Martha Stewart, Paula Deen, and my stepmoms WONDERFUL recipe.

I'm not saying it's the best in the world but it ain't bad. ;)






Stuff:

1 cup sugar
4 tablespoons unsalted butter - melted
4 large eggs - slightly beaten
1 cup and 2 tablespoons dark corn syrup (I use Karo)
1/4 cup bourbon (Crown Royal Maple is great! 1 hotel bottle is just right too)
1 teaspoon vanilla extract
1 and 1/2 cups raw pecans - fresh if you can!
1 large egg yolk
1/8 cup heavy whipping cream
1 unbaked pie crust - 1/8 inch thick


Do it:

-Crush the pecans up in a bowl, with your hands to release all the oils.

-Add your pie crust to a shallow 9inch baking dish and arrange/cut the edges as you please.

-Whisk the sugar and melted butter in a large mixing bowl.
-Mix in the slightly beaten 4 eggs, corn syrup, bourbon and vanilla and mix well.

-Fold in about a quarter of the crushed pecans.

-Pour the mixed filling into your pie crust.

-Arrange the remainder of the pecans on the top of the filling.



-In the bowl you used to crush the pecans, mix in the egg yolk and whipping cream (To mix the yummy pecan oils in). Then lightly brush the outer crust with the mixture.



--Bake at 400 degrees (preheated) for 15 minutes. Make sure to have your pie on a cookie sheet incase of overflow.

-After 15 minutes, reduce the heat to 350 degrees and bake for around 1 hour. Check by sticking a knife in the middle of the pie. When the knife comes out not sticky with pie filling you're done!

Let cool, serve with some whipped cream and enjoy!

hrm not so sure how much i would enjoy the top looks a little burnt other than that looks yummy

Alas! I got distracted and the pie stayed in the oven a bit too long... otherwise my guests said it was delicious ^_^

gotcha i might try this without the crispy top heh :P

kinda wish you got a side pic of one of the cut pieces just to see exactly how gooey it was
