This is a super easy, quickly prepared and delicious cheesecake (actually it's a pie). It's light and fluffy, and matches perfectly with an espresso. Enjoy!

Stuff:
1x 8oz package of cream cheese
1/3 cup of sugar
1 cup of sour cream
2 teaspoons of vanilla
8oz of whipped cream (cool whip is fine (and easy))
1x graham cracker pie crust


Do:
Soften the cream cheese.
Beat the cream cheese until smooth and gradually mix in the sugar.
Blend with the sour cream and vanilla.
Fold in the whipped cream and then blend well.
Spoon into pie crust.
Chill until totally set (at least 4 hours).

It really is! And the chilling is the step taking place of the baking... it's a great dessert for last minute.
