As a New Englander I love fried fish, and with the abundance of cod/haddock one of my favorites is fish and chips. Granted deep frying isn't as healthy, if that's your aim I'd go for baking. But, to fry fish I usually make a simple batter with flour, baking soda, salt/pepper, milk and eggs (usually 1 cup flour = 1 cup milk and 1 egg for the ratio). As for the oil you want something with a high smoking temperature, something like canola oil which can stand a higher temperature than a vegetable/olive oil without burning.

I like to make my own fish badder, but there are some great badders out there which you can purchase. Even Shake n' Bake will work lol.

Then you just fry it in oil like the guy above me said.

Pan fry it..
Put some oil in the pan (not too much)
bread the fish with flour, salt, pepper and whatever else you want
and then put it in the pan until it is lightly browned or until the fish is cooked.

As far as fish goes, as a New Englander alongside hedon, I find grilled salmon the best. Untouched on the grill, throw it on and grill it about 6-7 minutes per inch. Literally don't touch it from the spot you place it on the grill until you're ready to take it off and eat it. It should be a perfect pink. I've never been a fan of fried fish and baked fish needs to be highly buttered and have incredibly high amounts of delicious lemon pepper.

i prefer frying fish in a pan with olive oil, after the frying add salt, pepper and lemon juice
let it rest for 5 mins
eat it
