When do you use evaporated vs condensed vs plain milk when baking? Most recipes i use call for plain milk ( i use unsweet almond milk as a substitute). but pumpkin pie has two main recipes, one with condensed milk and the other with evaporated milk. whats the difference in the end result with each?

Condensed milk is pretty much evaporated milk with sugar added. The only real difference it's gonna make in your recipe is how much sugar you will have to add.

oh. Huh. guess i'll stick to evaporated so that i can add stevia instead of sugar. thanks

evaporated milk is more thick, it has a BOOTY LOAD of sugar added
Milk has little sugar added and more thin.

condensed milk is super sweet usually used in deserts like pies
