braised it. onions, carrots and shiitake mushrooms for the pan instead of regular mirepoix, and sauce was basically chicken broth, coconut milk, splash of red wine, garlic, cumin, coriander, garam masala.
was awesome.
(the coconut milk was actually a mistake, i meant to add it to my soup but i got distracted and i accidentally added it to this instead. worked very nicely with the other flavors, though. would do it again.)
