why should there be water in egg wash? what does it do?

depends on whatyou do..

if you coat the item, such as like a bread, it gives it a glossy more hard look to it and adds color and an disttinct crust.

or an egg wash beforeyou are about to do like a shake and bake,
it helps the crumbs stay on the item.

Usually you add water or milk so it's easier to spread... just eggs tend to be too thick to make a thin layer, makes lumps...

it depends on the amount your trying to bread. i personally will season the egg wash with S+P. most of the spice will get toasted due to frying.

also added if you have a spice u wan add to the top as well as a glossy top.
