I'm making chili today, too. My recipe is similar, but a little different.
1. Brown diced onions.
2 Add some minced garlic.
3. Add the ground meat (I'm using buffalo)
4. Add spices (cumin, coriander, salt, pepper, paprika, cayenne, and a touch of cinnamon) and minced chipotle chiles with some of the adobo sauce they come in
5. Add tomatoes (I like diced stewed), tomato puree, white vinegar, and dark beer
6. Add beans (pinto, black, kidney)
7. Add diced green chiles
8. Simmer for as long as you can hold out.
Serve with shredded jack or cheddar cheese, sour cream, cilantro, and your favorite hot sauce.
I have a coffee grinder that I used to use just for spices and would try to grind all my spices fresh. I recently just moved into a new apartment though and my pantry is lackluster, much like my wallet too. The taco mix works fine for now, but I really want to get all my spices back.
