i went to chuckanut bed and breakfast 2 days ago.
this place is pretty high class... not too bad but its really nice with excellent presentation.

anyway i decided to get the jerked pork chop and they asked me how i would like it done...
i had never heard of anyone cooking pork chops any lower than well...

O_o so i ordered it medium... and it was the best chop I've ever had... it was 11 oz and came sliced into 10 pieces with the bone in one of them.
but I've never had my chop done medium... and this is the first place I've ever went to which has asked....


have you ever had your chops done medium?

Also I always thought pink porn was bad or something... like partially raw? I guess it's like beef then?

pork chops used to have to be done well otherwise you risked bacteria. these days pork is much cleaner, though, and can be made less well done without risk. most people dont know that though, and still cook em well done.

i guess so... just heat it to a certain point and bam...
maybe thats why when i eat good ribs they are a little pink...

Actually when you eat a good rib and its a little pink you will notice the pink is towards the outside not the middle & this is because of the smoke that has penetrated the meat ;P

Most who cook pork tend to murder it. I see medium as a perfect temperature on the meat, but I don't get chops anywhere anymore because they tend to be dry as shoe-leather. It's also a matter a safety, if you don't have a cook that doesn't understand the right temps you can kill someone super easy with bad pork.

True story, most people cook it to death even tho it is allready dead :(

nice and pink please "Au perle de sang" would be a nice term to describe it :p "Pearls of blood" as in still juicy and some juices seaping out :O

Pork actually very recently was deemed quality enough and free of enough foodbourne illness to be eaten almost rare I believe

Few years ago you would have probably gotten very sick
