I've been doing a modified low carbohydrate diet for awhile now, lost 40 pounds, but getting board with the same old stuff... Wondered if anyone had any ideas...

thats great, keep it up.

should be pretty simple, just eat lots of meat, whether chicken, beef or other. heres some more specific ideas, too, though:


meat stuffed meat.

to give some variety, eat multiple types of meats, even together. if you can get boneless chicken legs, preferably with the skin, try this. you can do it with breast meat also, but itll be a bit dryer. sautee some ground beef in a pan until nicely browned. add a lil soy sauce and brown a bit more. remove and set aside, leaving the fats in the pan. dice an onion and sautee that in the pan til browned, adding a bit more oil if necessary. youll want to have plenty of oil in the pan for making a roux later. add some chopped spinach (i use frozen) and cook til soft. season as desired. add some flour and stir well, cooking til you dont see any visible flour. add the beef back and mix, then allow to cool. add one egg and mix well. stuff the boneless chicken with this. sprinkle the tops with salt, pepper, onion, garlic and spray with a lil oil. bake at 350 for 45 min or so.

another option is meatloaf roll - use different types of ground meats to make layers, then roll it up.


i put rice in this, but you dont have to put a lot and its very filling - mix egg, ground beef, spices, rice, oil. put some pasta sauce on the bottom of a pan. lay meat mixture on top, then put more sauce on top. cover and bake at 325 for an hour and a half.

you can have water it's pretty good

you can always have a brocoli, almond and chicken saute stir fry, has nutrients and good qualities.
filet mignon - it's a must for me in summer with red wine in it


also you can do a pot roast.
6g of carbs with carrrots, 2g without

Chuck roast
Toasted or regular minced dried onion *
Toasted or regular onion powder
Garlic powder
Salt
Pepper
Any other desired seasonings
Carrots, in large chunks, optional
Other low carb vegetables that are suitable for roasting (onions, celery, turnips, rutabaga, etc.), cut into chunks

Place the roast in a roasting pan or 9x13" baking pan. Sprinkle liberally with your desired seasonings on both sides. Arrange the carrots and other vegetables, if using, around the meat and sprinkle them with seasonings. Cover the pan with heavy foil and roast at 325º for about 4-5 hours until tender.

are you doing keto or just low carbs? there are a lot of steak/chicken recipes, you can use cauliflower "rice", eggs (sunny side up, easy over, hard over, poached, omelet, scrambled, hard boiled, soft boiled, etc)

I haven't done a roast in a long time... it would be good to have as a "sandwich" where I use lettuce leaves instead of bread. Thanks for the idea!

I had not thought of using two meats together to get something different. I love spinach as well. This is a neat idea, though I think I will leave the rice out. I'm pretty strict and stay under 100 carbs a day. I'm also a diabetic and have found that other diabetic symptoms that I had stay well under control when I stay below 100 carbs. Its working so far!!!

I do eat lots of eggs, trying them in different ways. Fiance isn't crazy about me eating boiled eggs, lol. BUT I love them that way. I've heard about doing "mashed cauliflower" and its supposed to be like mashed potatoes, but I'm not that crazy about cauliflower, so not sure that I would like it. One day I'm just going to do it to try it. Maybe with salt and butter, it would taste better.

I'm staying under 100 carbs a day, so really not in ketosis. Its the balance that seems to work for me to lose slowly ( Started at Thanksgiving, lost the 44 pounds since then) and what keep my diabetic neuropathy pretty under control). If I go even lower, the neuropathy is even better, but I know its not good on my kidneys, so I drink water like its going out of style. At least a galloon and a half on a low day. On a hot day well over 2 galloons. Because of the diabetic symptoms, I'm afraid this might become a lifestyle for me for the rest f my life. If I have any type of sugar, even a cookie, I have extreme pain in my feet again, its enough to make someone swear off sugar for life!

haven't tried his cheesecake yet, but i like his other recipes. just search for his low carb ones
