Not really.. The cookies will break apart Elmore easily without butter or eggs..

Fruits are good for egg substitutes. They won't interrupt the flavor, and will provide the stability of what an egg would normally do. Apple sauce works well, so does mashed banana. I've heard tofu works well but I've never been brave enough to try it.

There is also a thing called liquid egg replacement you can buy it at the grocery store. If they don't have the liquid version, you can get the powdered version and add water to it.

I would go with the applesauce. It is a great binder and will act just like an egg, and will have no taste additive like a banana might have.

1/4 cup applesauce = 1 egg
