So it was a test run on the newly acquired smoker but IMO came out pretty damn good. Ended up going through 2x 8lb bags of lump coal & aprox 3/4 bag of hickory wood chips. Only smoked them for 3 &1/2 hrs & did it at a higher temp then usual because we got started late & wanted them to be done in time.

The ribs at about the 2 & 1/2 hr mark before saucing


The rub was a combo of bunch of different shit & sauce was kinda the same way. Started out with I think its called "dave's inferno" bbq sauce or w/e then added ketchup, mustard, pepper, garlic, cayenne, etc. etc.

Result was a pretty damn tender rib with a good crust on it & a sweet but hot BBQ sauce that was layerd multiple times so it was nice & sticky. Next batch should be even more delicious :drool:

that would give a lower temp, and he mentioned he needed to do it faster, so thats probably why...


nice smoker, and good-lookin ribs, though. ive only got a cheap lil 22" square bbq to work with. still make some awesome stuff on it, though.

I did. All of those coals in the main pit were out in the pic all the smoke is from the fire box. I used them in the beginning to heat the main chamber so it would cook faster. Next time it will be a full 5-6hr Smoke @ 225ish degrees. Should be absolutely amazing.

heh I would be drunk as fuck by the end of that day ;P

Im gonna *TRY* to get things up & smoking by 10-11am next time so I can do at a max 225degrees & go for a solid 6hours+
