anyone else like some good ol barbecue? ive been pretty into it, lately. previously i always used regular self lighting briquettes, but i came across some books on barbecuing on amazon and after reading what i could from the previews, i was wanting to try out some real barbecue. finally was able to pick up some mesquite chips and hardwood lump charcoal and lit up a few weeks ago. been barbecuing almost every week since, its good stuff.

whats your favorite stuff to barbecue?

i came up with an awesome recipe for tequila-lime chicken, so ive been doing that a lot. tequila, lime juice, sriracha, garlic, salt and pepper. bone-sucking good.

also made some awsome steaks marinated in soy sauce, dry red wine, garlic.

I'm pretty big on barbecue. NO clue how to make it though.

thats a man's job on the grill ;)

A large rack of thick meaty ribs.... I usually gotta search diff stores to find good ribs nowadays... Most ribs I find are skinny and boney...
I usually smoke them without rub or sauce. But I been thinking bout trying a habanero sugar rub.

I always use lump coal when smoking anything. Makes more even heat & has good flavor. You can try smoking something with indirect heat on your BBQ. Its easier the bigger your grill is but you can get a similar effect on a small BBQ as well. Google some easy ways to transform your BBQ into a cheap smoker bet you wont regret it.

I've been living in South Africa for a while now and they have their own twist to a BBQ, the "braai".
It's basically the same, but involves making a fire with wood instead of charcoal. It gives a nice atmosphere and will definitely keep your guests entertained.

aha! i was looking it up on wikipedia, and saw the term braaivleis. i was thinking that vleis must be related to fleisch, the german word for meat. sure enough, i click on afrikaans to read more about the language and its a west germanic language. most definitely related.


also, ive cooked with wood before, when i was in camp. another guy made a fire banked closely with rocks to make a primitive stove. we used to catch fish and cook em on there. good times...
