My solution for this, and also to make PB&J taste hella good is to spread peanut butter on both sides first, then spread jelly only in the middle section mainly.
After that, seal that sandwich up and you will have easily spread the jelly (thanks to it being on peanut butter) and will also have that oozing out jelly with every bite <insert sexual inuendo joke here>

Just spread the shit around, it's not that hard. Keep practicing and you'll get the hang of it.
