i like to buy a loaf of french bread (not baguette) when im having soup/stew,
the kind i buy is american grocery style, cheap and family sized.
i'm single so i can eat mebe half and then by the 3rd day it will be hard and stale.

do u have any recommendations for ways to use the bread as it gets stale?

i use it for fishing bait.

i suppose you could make breadcrumbs out of it, or put it on salad like croutons

Save up your old bread an make Tuscan bread soup. I learned this from an Italian friend, so the recipe is from memory, but the exact measurements don't really matter much.

~1 loaf worth of stale bread, torn/cut into 1-2" chunks
2 cans diced tomatoes
~3-4 cloves Garlic, minced
Salt & pepper to taste
~1/4 cup fresh grated Parmesan cheese
~1/4 cup Fresh Basil
Crushed red pepper flakes to taste
Olive oil

Cook the garlic in olive oil for ~1 minute, add the pepper flakes and cook for another minute, add the tomatoes and bring to a simmer. Add salt & pepper. Thin it out with a little water if it's to thick. Add bread and parmesan, stir them in, and serve with basil on top of each bowl (and extra cheese if you want). if you have parmesan rinds, they are great to throw in with the tomatoes for extra flavor.

You can also make bread pudding or stuffing out of stale bread.
