1- In a wok, fry an whole fish in a good quality oil. 5-6 minutes both side. remove the fish, put in the oven and keep it warm. Saved the used oil
2- cook the thai hot red peppers with lots of garlic in the used oil. Don`t burn the garlic, stop when it start to get lightly brown.
3- Add tamarind paste, palm sugar and a ;itt;e bit of fish sauce and boiled it for about 2-3 minutes.
4- drop the sauce on the fish and add fresh coriander (cilantro)
serve with steamed jasmin rice
