this is a delicate process so read carefully

first, you need to bake some chicken legs and wings in a casserole dish. don't use a pan, otherwise the residuals will evaporate and cook at the bottom of the pan. its best to use a dish that has just enough space to fit what you are cooking.
second, after your chicken is done, remove the chicken. take a bowl and a strainer and empty the residuals into a bowl while straining out any unwanted pieces.

thats the just the first part. you could skip this and use chicken stock from a can but it won't be as good. i did this on two separate occasions, saving the stock and freezing it for the following use.

now take some chicken breast, legs, thighs or wings and put them in a bowl. generously spoon some mayonnaise into the bowl with the chicken and mix it well.
now, lay some bread crumbs out on sheet of paper or a board. take the chicken, without removing too much of the mayonnaise and place it in the crumbs and press down gently, take a fork, flip it and cover the other side.
lightly sprinkle some salt, pepper, and paprika over the chicken. not too much or you might spoil the taste.

preheat your oven to 400

once you are all done here, grab a pan and lightly dress it with olive oil, like so:


place your chicken in the pan, when the oven is finished preheating, place it in the oven.
bake uncovered for about 20 minutes.

after 20 minutes, pull it out and close the oven.
it should look close to done at this point, but we're not finished
take a spoon and your stock from previous, without flipping, base the chicken with your stock until the crumbs are moist again.

place the chicken back in the oven and check it often.
ive noticed the filets cook quicker, if you are cooking a breast on bone, thighs or legs, check the inside to make sure its not pink before serving.
once its deep golden, its done. pull it out and let it cool before serving.

this is really easy to do and the ingredients are fairly inexpensive and easy to procure. i already had most of the stuff laying around and the stock that i saved from the first prep has lasted me a really long time and has good reuse value.
