If I make a steak with mushrooms, I sear the steak on both sides in a pan with oil then move the pan to a 350 degree oven to finish.
Then I pull the steak off the pan and let it rest on a wire rack,
I throw the pan on a medium high stove top and add just enough wine (same wine I'm drinking) to cover the bottom of the pan & break up all the flavor stuck to the pan. Then reduce that to syrup consistancy (stir for like 3 minutes) add oil and onions, allow that to cook for a few minutes so it has a head start on the mushrooms, add mushrooms, wait a minute.. Then I add either honey and soy sauce, or worshtersher and brown sugar, or sugar a1 sauce and brown mustard.
Turn up if desired, saute till the mushrooms have a light crust and the onions are translucent.

/e fuck I forgot garlic, make razor thin slices of garlic to add with the onions
/ee or if its a ham steak, use dr pepper and mustard, with earthy mushrooms like chantrelles and instead or onion use fresh pineapple or apple
/eee don't season the fuck out of your steak either. Unless your a smoker and have damaged taste buds all you need is a light coat of oil, pepper and salt.
/eeee let your steak come to room temperature before you cook it.

On a grill, obviously. Anything else is sacrilege, as is cooking a steak past medium.

When you're doing a topper for a steak you want to make sure that it isn't too strong, otherwise you'll drown out the subtle deliciousness of the meat you bought, provided you cook your steak no more than medium (if you don't, then you I feel sorry for you). For mushrooms and onions, heat your pan to medium high, melt butter (or EVOO) throw in your mushrooms and/or onions, add a small amount of garlic if you so desire, season with a pinch of salt and pepper and any other herb you like (very little is required), and saute until the onions have caramelized (browned) and the mushrooms have wilted.
