This is a very good recipie, I made it because I love to cook and it looked like a challenge. Now I make it all the time.
Also miso soup, not very many recipies say to add seaweed but I like to over load mine :)

at my last job we made a pretty good vegan dish. roasted vegetable and pesto tofu tien(tian?), on a base of barley risotto, with a smoked tomato couli sauce.

it's actually really easy to make and it's pretty fancy looking. lmk if you want better details
