what cheeses do u like to serve as appetizers? what do u like to serve with them? and any suggestions for wine pairs?

at the moment, im just thinking of getting a couple different cheeses, cubed bread, tomato, olives, hummus, assorted pickled veges
i was thinking of starting the night with some bubbly or rose? not really sure tho..

fresh mozz pearls /fresh tomatoes i think go well together.
and i always enjoy aged cheddar + venison sausage + crackers though.

you can use pretty much any cheese that you think tastes good.

grapes are one of the best things to serve with cheese and also maybe you could put a couple other sweet fruits out since you have alot of other strong savoury flavours going on (berries or figs would be nice)

edit: good quality cold cuts are always nice too but then you have alot going on

With what you've listed so far, I'd serve parano, ricotta salata, and feta--or similar Mediterranean cheeses. I, too, would add some sweet options. Quince paste--believe it or not--is very good with cheese. Manchego goes very well with sweet accompaniments. As another sweet option, I like to serve idiazabel with with honey. It's a very good combination.

As for wine, we usually go with a sweeter white with cheese--something like a riesling (sauterne or something similar is outstanding with cheese as a dessert course, btw), but it all depends on what you are serving. Red wine is good with saltier cheeses like ricotta salata and feta--I like something a little jammy like a zinfandel; stands up nicely

usually things of similar color pair well. i.e. dark wine, dark foods. dark fruit, dark cheese
