Reiterating: I need help with someone whose actual job is a butcher, not simply tips on how to butcher, which I am already familiar.

The reason being I need information on the evolution of butchery, not technique.

Googling would probably help you a lot more. Unless you specifically need first hand information for whatever project you are working on.

Butcher here. I myself know little of the history and I highly doubt any real butchers know the history... we're not academics, we're butchers.
