What kind do you like?

Made a great (and easy) pork chile with beer today (adapted from Thrill of the Grill).

2 lbs. boneless pork butt; diced into ~1/4 inch cubes
5 yellow onions; diced
6 bottles/cans beer; I like a dark beer here with extra malt and not too much hops or you can get a bitter chili; I used Avery's Elle's Brown Ale today
2-4 T minced red or green hot peppers of your choice
2 T minced garlic
4 T Chili powder
2 T Cumin
2 T Oregano (Mexican if you have it)
1-2 t Cinnamon
1/2 cup red wine
1/4 cup white vinegar

Brown the pork over high heat in batches in peanut or vegetable oil. Reduce heat to medium then saute the onions (by themselves) until clear. Add the onion and cook for another minute. Add the pork back in and all the other ingredients. Bring to a boil, reduce to a simmer, and cook for 2-3 hours until pork is tender. Serve with grated jack or Muenster cheese, sour cream, diced onion or scallions, and hot sauce of your choice (a chipotle sauce works really well).

I also have recipes for a more American style beef and bean chili, and a Tex-Mex green chili if you are interested.

Also like the one above but with a few different things try Seven-chile chili. Look it up on Google. Here's the ingredients if you were curious.


Ingredients:
6 anchos
2 pasilla
2 costeƱas
2 guajillos
4 chiles de arbol
4 pieces of bacon
4 pounds of chuck roast, cut into 1/4 inch cubes
1 large onion diced
6 cloves of garlic, crushed
1 cup of brewed coffee
1 bottle of beer
2 cups of water
1/2 tsp cinnamon
1/2 tsp clove
1/2 tsp allspice
1 tsp coriander
1/2 tsp cayenne
1 tablespoon cumin
(For all spices, please feel free to add more to taste throughout cooking if you like.)
2 chipotles in adobo
Salt to taste
1/4 cup masa harina
1/3 Mexican hot chocolate tablet, grated

Deer meat chili is prabably the best tasting chili I ever had. Not certain how you can get the meat without hunting a deer though.
