I'm curious if you guys have any chicken salad recipes.
I asked my mom for hers which is delicious and she uses yogurt in place of mayo for a healthy alternative but she has no exact measurements and I'm not sure I trust myself enough to eyeball it.

You can use any type of cooked chicken..
bbq chicken, roasted chicken, chicken used to make a chicken broth as long as its not coated in lots of sauce and you have white and brown meat you should be fine.
celery and onion is good inside.. all you need to do it chop it up into small cubes.. take the chicken off the bone and cut into small pieces..
then put as much mayo as you need until its the right consistency.. creamy but not TOO creamy!
add some salt and pepper and DONE
i add a bit of spices liek smoked paprika but its not needed :)

I enjoy dill pickles chopped into the salad as well

Fresh cooked/grilled chicken is 100% better than the canned chicken. There really isn't a "right" way to make salad. Some like it sweet and add grapes, raisins, berries. Other's like it savory like myself. Onion, celery, pickle (I also add cajun seasosing, pepper, salt, paprika). Add mayo to suit your tastes.
