my fave western salad dressing is oil based caesar. dont care for the creamy one. i need to learn how to make that from scratch.

a good asian recipe will be - soy sauce, garlic, red chili flake/powder, vinegar, olive oil, and sugar.
some more exotic ingredients u should add if u can are sesame oil, fish sauce, wasabi, ginger, soybean oil. this is the kind of salad u eat at korean bbq.

a good premade dressing is mustard seed. kinda salty but if ur not making ur own u can expect them to be salty.

indonesians use this sweet peanut sauce thats not bad.

As for a pretty basic vinaigrette, you can mix cider/sherry vinegar (1 part) with maple syrup (1 part), add enough dijon moustard to thick it up and whisk in some veg oil (2 to 2.5 part)..
Also another basic vinaigrette, greek style (great for fresh summer salad) , just mix lemon juice (1 part) , lemon zest, chopped garlic, dried oregano (lots of it) and good olive oil (3-4 part) .. you can also add dijon mustard if you wanna make it more thick..
But when it comes to vinaigrette theres so much you can do... have any idea on what youre looking for? fruit based vinaigrette? creamy ones? basic oil/vinegar ones?
