So I need a different way to cook chicken breasts that isn't too expensive.
As well as side dishes if you can.
Obv want this to make for a date.


Kinda want to make it into a Caribbean theme dinner.(That is just because I like Caribbean foods, forget whether or not she likes it ;) )


Any help would be greatly appreciated.

Here's all you need (all adapted from Thrill of the Grill--

Grilled West Indies Spice-Rubbed Chicken

Spice rub:

1T ground turmeric
1T ground ginger
1T ground paprika
1tsp ground cayenne
1tsp ground allspice
1/2 T ground black pepper
1tsp salt

Mix together and coat the chicken liberally; grill until done. If you don't have a grill you can either broil or bake the chicken.

Black beans

2 cans black beans (rinsed)
1 yellow onion, diced
3 cloves minced garlic
1 dark beer
1 T ground cumin
1 T ground coriander
1 T ground paprika
sat & pepper to taste
water
diced scallion

saute the onion in olive oil until lightly brown; add garlic and saute for another minute; add beer, spices, and beans; add water (if needed) to just cover everything; cook for at least half an hour; don;t serve until you've cooked off the water and the beans don't look like soup. Garnish with scallions.

Grilled bananas.

4 bananas, sliced in half lengthwise
1/4 cup molasses
1/2 stick of butter
juice of 2 limes

Melt the butter; combine with lime juice and molasses while hot; cook bananas skin side down on grill for 1-2 minutes until skins start to blacken; coat non-skin side with mixture while cooking; flip and cook for another minute.

If you want another side, serve white rice with this. From experience, though, most people don't get to the rice with this meal.

Good drink to go with this (mojitos also work well):

Dark & Stormy

Reed's Extra Ginger Beer
Gosling's Black Seal Rum
Limes
Ice

In a glass with ice, combine 1/2 bottle of Reed's with 2-3 shots of Goslings and the juice of 1 lime (toss in the lime halves after you squeeze them).
