you'll be able to tell when its not good to eat. judge by sight then smell then taste. if it passes all 3, then its fine. i dont throw something away just because the expiration date is today, or follow some hard rule on when to throw away food. thats plain wasteful and very sheep mentality. this is for my own personal consumption tho. for a restaurant, ofc u'd want to serve the freshest food possible. any sign of old, kept food and i would never go back to a restaurant

The only problem with that outlook is that you can neither see nor smell nor taste much of the bacteria that can make you sick. If I'm not planning to use something within 3 days, I freeze it.
