what are some items you just couldn't do without in the kitchen once you bought em.

right now I cook with a gas stove and cast iron skillets but would love to get some nicer items, idk where to start though.

Definitely pick up good kitchen knives-
Sabatier knives would be a starter on the low price range, a set of Global would be ideal. Pref in handle material and weight is important though.. if you're going to invest in a set go to a store that carries kitchen utensils and give them a test-run. Hold it, check the quality of metal, etc.

what about ceramic knifes? has ne1 tried these yet

Ceramic knives are very sharp but no one will use them in a professionel kitchen... if you drop them on the ground, they could break easily.
Personally i don't like global, mainly because of the shape of em, handles are way too small... just go to a kitchen store and check what knife fits you best...

I have four knives that I like. One is for bread, the other for dealing with things like strawberries, one for filetting fish and another that use for everything else. None of them were really expensive and the reason I like them is the weight and how they fit in my hand. I don't like heavy knives, they're harder to control. I'm not much into kitchen gadgets, but I do have an electric hand mixer, blender, garlic press, cheese grater and a carrot peeler, oh and of course measuring spoons and cups. I haven't found any reason to add anything else.
