Dip the chicken in buttermilk, the dredge in flour until completely coated, and leave it on a sheet of wax paper for a while until it all sets in. Heat the oil very high, about 350 F and brown, then turn down the heat and cover, this cooks the chicken all the way through without burning the outside. After about 30 min turn the heat up again and fry until the skin is crispy. Drain on a paper towel and you got some quality fried chicken. :)

I use either regular milk or egg whites, then for the dredge I add in pepper and herbs to the flour - you could also bake the chicken, or boil it (if you boil it don't bother coating it with flour) I also like cooking chicken in tomatoes, out of the can ones are fine, there are tons of ways to do chicken other than deep fried - also, once you've cooked the chicken you can refreeze it if you've got your freezer sorted out

If you run out of shake n bake and you like crispy chicken you can crush cornflakes and use those - just add pepper and stuff to give them more flavour
