You really don't have to spend a lot of money to improve the quality of that meal. Next time, think about buying a couple of baking potatoes. They will be better and better for you than potatoes out of a box. I'd also snag a few ears of fresh corn. Even frozen corn will be better than canned. And this meal is screaming out for something green. That said, you could try this with what you have.
Potato pancakes
Mix and cook your potatoes like the box says (no extras) then allow to cool. Stir in an egg, some flour (start with 1/4 and add more if the pancakes fall apart) some chopped scallions, salt, and pepper. Saute them in oil until they are brown on both sides. Don't make them too big or you will have trouble flipping them.
Bacon Corn relish
Dice 4 slices of bacon and crisp it up. Remove from pan and saute a diced yellow onion in the bacon fat (if this bothers you, wipe out the pan with your skirt and use oil). Add some minced garlic (or powder) and cook for a minute. then add the corn, some fresh or dried sage, and salt & pepper. This is really good with fresh corn, btw.
Pork
Try sauteing it with a glaze rather than the going with the crust. I'd go with either a mixture of honey and mustard or dark beer and some molasses if you are feeling adventurous.
ty for the suggestions. we had our deep freezer messing up so the meal plans was pretty last minute. plus it doesnt take much to feed my family as long as it is edible lol. soon ill have a whole turkey, some boneless chicken breasts, chicken leg quarters and ground deer meat to decide what to do with lol.
