Shrimp Scampi

Ingredients:
  • 1 pound Shrimp, peeled
  • 12 tablespoons Butter, unsalted
  • 1 tablespoon Vegetable Oil
  • 8-10 Garlic cloves, minced
  • 2-3 tablespoon Lemon juice
  • 2 Scallions, chopped
  • 3 tablespoons Parsley, chopped
  • 1 teaspoons Lemon peel, grated
  • 1 pound Angel hair pasta
Preparation:
Boil 5 quarts of water in a large stockpot, add 1 tablespoon salt if desired. Cook angel hair pasta to al dente (check box for specific timing). Strain and put into a serving dish.* Melt butter in a large frying pan over medium heat. Add oil, scallions, garlic, and lemon juice and stir. Cook until boiling. Rinse shrimp, then add to the pan. You can add them whole, or remove the tail and chop them up into smaller cubes to be mixed in with the dish, depending on personal preference. If shrimp is raw, cook until pink and tender. If they were bought cooked, simmer for about 5 minutes, stirring occasionally. Add parsley and lemon peel. Serve over pasta.

*Boiling the water for your pasta will take the longest amount of time, so make sure you get it out of the way before you do anything else. You don't have to cook the pasta right away, try to time it so that your pasta will finish at the same time as your shrimp, for best quality.
ENJOY! :)
