I have no idea how to prepare eggplant

Got some from my neighbors garden

Give me some ideas jsp!

you can bread it in seasoned flour and deep fry it, then serve with pasta and sauce, AKA, eggplant parmesan

eggplant lasagna

or try a grilled eggplant/other veg sandwich with goat cheese on a garlic-rubbed ciabatta (or any crusty bread)

"aubergine caviar" is pretty good... split your eggplant wide open, take your knife and cut it like this (pic)... go deep but dont go through the peel..

Rub with olive oil, salt/pepper, stuff the the eggplant with garlic and fresh thyme... let roast in the oven until its slighty rosted and easy to scoop with a spoon.
Scoop the eggplant out of the peel, put it in a culinary robot or blender... purée it with olive oil, salt and pepper, until smooth.
Enjoy with pretty much anything (fish, chicken, dip etc)

basically substitute roasted/grilled eggplant in place of the noodles and use all your basic/favourite sauces, cheese, etc

It's really good.

I also make baba ganoush once in a while. The key to making it really good is to smoke the eggplants on a charcoal grill rather than roasting them in an oven (but that will do in a pinch).

There are plenty of recipes out there, but they are all basically eggplant, garlic, tahini, lemon juice, cayenne, olive oil, flat leaf parsley, salt, & pepper. Serve this with warmed pita bread.

i switched over to vegetarian diet a couple weeks ago, eggplant is a godsend, so meaty in texture like mushrooms. egglplant parm is a nice decadent dish. have it w/ pasta for dinner and then make a sandwich in the morning for a hearty breakfast.
if u interested in asian style eggplant to eat w/ rice, parboil eggplant for 2 min, dry, then stir fry w/ soy sauce, garlic, sesame oil, some kinda pepper like jalapeno (i'd use serrano for a nice kick), garnish w/ green onion. a fish stock would go well w/ it for seasoning. japanese furikake would be good, or bonito stock/flakes, add to the umami (meatiness) index.

I find the squishy texture of eggplant flesh offputting, but the taste is great. If the texture of a squishy, soggy mushroom is not your idea of fun, try making eggplant fries.

Cut the eggplant into french-fry shapes (thicker than fast food fries).
Soak the eggplant fries in ice-cold water for an hour at least (this is important for getting them crispy).
Season some rice flour with cayenne, salt, onion powder and black pepper to taste.
Dredge the fries in the flour mixture.
Fry in hot oil for about 3 minutes.
Serve with your favorite funky dipping sauce. Try a remoulade or tartar sauce for these.
