Spinach has a type of acid that causes your teeth to feel like that. I am quite fond of baby spinach, but it makes my teeth feel like sand paper. From what I have read it is not harmfull to your teeth, but the abrasiveness makes for very clean teeth.

steam it in a steamer above the water in a covered pot best way imo

agreed on the texture of canned spinach - I use frozen spinach if I'm adding it to a dip. for fresh, I do like it pan fried in butter - I cook it over a lower heat until it's wilted but not soggy. Steaming is great too. I think my favourite way to have spinach has to be in a salad though - baby spinach, well washed to get rid of any sand, rub the salad bowl with a garlic clove (wooden bowl if you have one) sliced strawberries, thinly sliced red onion and either some toasted sesame seeds or almond slivers toss it with a simple balsamic vinegar and olive oil dressing. It's a nice change from the mandarine orange and bacon that most people make (although I like that one too)
