Here are two that I've come up with. First is based off of the buffalo burger at Wynkoop Brewery in Denver. Second is a random creation because I like chipotles. Both are good. The key to any buffalo burger is not to cook it too long. It won't have much fat, so it dries out quickly. Don't go past medium, and stick to medium rare for the best burger.
1 pound ground buffalo
1 t minced garlic
1 t dried sage
1/2 t crushed red pepper flakes
salt & pepper to taste
1 pound ground buffalo
1 T Tabasco chipotle sauce (or similar)
1 t minced garlic
salt & pepper to taste
Both of those look amazingly good.
