A couple more simple eats:

Angel Food Cake Dessert:
Ingredients:
1 package strawberries (I think they're 6 oz packages in most stores, but you could use as many as you wanted really), quartered or halved depending on how big you want the bites to be and how big the berries are
1 package blueberries (4 oz packages I think)
1 package strawberry Jello (can use any berry flavor really)
1 Angel Food Cake, cubed
Whipped Cream

Directions:
Cube Angel Food Cake into bite-sized pieces and put them in a large dish/bowl
Cut up berries as needed and combine with Angel Food Cake
Prepare the Jello and while it's still liquid, pour over cake/berry mixture.
Serve with a dollop of whipped cream.

Strawberry and Spinach Salad
Ingredients:
4 cups of baby spinach
1 package strawberries, quartered/halved depending on size
1 cup almonds, chopped and toasted
Your favorite vinaigrette (I use Raspberry)

Directions:
Combine spinach and strawberries in a bowl
Toast almonds (can toast them before or after chopping) - to toast, simply put in dry pan and cook over medium heat until you can smell the nutty aroma
sprinkle almonds over spinach and strawberries, toss
Serve with a Tsp or two of your favorite vinaigrette dressing

A ceviche is by definition is something raw thinly sliced marinated in something acid. :P

vouch. i have made this before with shrimp marinated in lemon juice (overnight, the acidity actually cooks it). i marinated them whole.

Yeah but you need really good quality and fresh shrimps to eat em raw. Frozen black tiger is a no-no :P
I ate raw shrimp in japan, it was delicious but yeah its not the same variety we have here.

Some of you probably already know this recipe. I got it from watching the special features section of a movie (Once Upon A Time In Mexico). If you haven't seen it, I highly recommend it! In the movie, this is a dish that Johnny Depp's character orders at every restaurant he goes to, and one place in particular makes the dish so well, that he goes into the kitchen and kills the cook. :P Well, being the food nut that I am, I thought I would try to make it for myself.

I had to go to 3 different stores to find the ingredients I needed (one Mexican, one Brazilian, in addition to my normal grocery store), but it was certainly worth it. If you enjoy Mexican spices and very spicy food I would highly recommend this (hence my post, of course). :)

Puerco Pibil

Ingredients:
  • 5 pounds pork butt, cut into 2 inch cubes
  • 5 tablespoons annato seeds
  • 2 teaspoons cumin seeds
  • 1 tablespoon whole black pepper
  • 1/2 teaspoon whole cloves
  • 8 whole allspice berries
  • 2 habanero Peppers, fresh or dried, cleaned and minced (optional if you do not enjoy very spicy food)
  • 1/2 cup orange juice
  • 1/2 cup white vinegar
  • 8 garlic cloves
  • 2 tablespoons salt
  • 5 lemons
  • 1 shot of tequila**
  • banana leaves
Preparation:
    Grind the annato seeds, cumin seeds, whole peppercorns, whole cloves, and whole allspice in a spice grinder or coffe grinder.

    Blend the cleaned and chopped habanero peppers with the orange juice, vinegar, garlic and salt.

    Mix the dry spices with the liquid.

    Add the juice of 5 lemons and a nice splash of tequila. Blend thoroughly.

    Place the cubed pork butt in a large zip lock bag and add the marinade. Soak 4-6 hours, in refrigerator, turning several times.

    Line a (8x13) baking pan with banana leaves. Pour in pork along with the marinade. Cover with Banana leaves and seal the pan with foil. Bake in a 325 F degree oven for 4 hours. Serve over white rice.

    **Don't cheapen yourself on the tequila. You're only using a very small amount, but the quality of the tequila is one of the things that influences the quality of the whole dish.

wtfpancakes

These're easily the most delicious fucking pancakes i've made like ever.
don't sub out the soya milk, the vanilla makes it win & god.

This makes about 8-9 6" pancakes.

dry ingredients in 1 big bowl:
3 cups flour (all purpose)
4.5-5 tsp baking powder
1.5-2 tsp salt
6 tbsp white sugar

butter stuff in microwaveable bowl:
2 tbsp butter
4 tbsp margarine
Nuke @ 50% power for ~1:15

Chop 1 quart of strawberries (~2 cups afterwards) into roughly 1-1.5cm ish chunks

wet goop in 1 med bowl:
4 eggs
2 cups vanilla-flavored soya milk
Pierce the eggs + beat w. soya until the color's consistent
Dump the melted butter in, stir briefly (like 5s tops, you don't want the butter solidifying here)
Dump this into the dry bowl & stir it until the flour's all incorporated - don't stir it smooth.

Dump the strawberry chunks in & mix it until they're more or less evenly spaced & covered with pancake goop

I do 1/pan, ~1tsp of margarine under each pancake, med heat (4-5 on the dial) - you want them to cook thoroughly & brown w/o burning - higher heat will burn the outsides but not cook the insides as well.
These aren't as runny as other pancakes so you might hafta pat them down a bit, so they spread out & cook okay.
Use a ladle or slotted spoon to portion it, doesn't really matter.
