This isn't exactly poutine, but I really like russet potato fries with beef gravy and feta cheese. Much better than using cheese curds and chicken gravy in my opinion.

Why does it have to be beef gravy but not chicken gravy?

Just a matter of taste preference for me. I've never had chicken gravy and feta cheese on fries, but I've had cheese curds with chicken gravy on fries, and I much prefer beef gravy and feta.

Any cheese works for me, I think just potatoes and cheese are individual food groups for me.
