Here are a few main dish ideas I have:

  • Chicken breast stuffed with spinach, gorgonzola, habanero, cream cheese, and grapes.
  • Pan seared salmon with cranberries.
  • Some kind of pork with watermelon salad.
  • Tilapia or mahi-mahi with plantains and spice rum.
  • T-bone steak with radishes
  • Baked oysters

Obviously they aren't complete by any means. They're just a couple main ingredients to work with. ^_^ Sides would also need to be thought of.

I've never had salmon with cranberries. Have you gone this route before? Sounds interesting.
I just started curing a nice piece of salmon for a couple days so we'll see how that goes. Standard curing process but added a decent amount of fresh dill on top. Planning to serve it with some rye bread and radishes to go alongside a potato salad with caraway seeds to hopefully tie it all together.

Edit: Pork with a watermelon salad sounds great too. Would be pretty good to do a whole pork loin with some sort of acidity (mustard?) to cut the sweetness of the salad. I think a well cooked pork loin is one of the best cuts of meat. So delicious.

I personally have never made anything with salmon and cranberries. I had some blackened salmon and a cherry chutney at a restaurant before though. That was the inspiration to try something. ^_^ And I've always wanted to trying curing something. Lots of little things I've never tried before.

No idea about the pork yet, a pork loin could be a good option though.

Meatloaf with all sorts of yummy stuff! It was fantastic. :D I'm teaching her well.

im teaching my daughter how to cook. soon she'll be correcting her teacher on cooking methods in class... ;)
