I made confetti cupcakes with a Strawberry & Rum Buttercream :)
Strawberries aren't in season so they were a bit sour.
And I didn't have a good quality dark rum on hand so it could have been better.

Just a side note for the lobster tails... you should use panko (japanese breadcrumbs) instead of regular breadcrumbs :P

I've done it before with panko, for some reason I enjoy it more with regular breadcrumbs!

Yeah, but I mean like heavy texture rather than light and fluffy :)
I don't know how to explain it.. I like how the breadcrumbs toast and soak up the garlic butter!

I had left over confetti batter so..
I made a different buttercream to go with it :)
I made an Amarula Liqueur Buttercream!
