And the frozen fish was more for home use. Sushi restaurants have their own means to verify vendor reputability and acquire fresh product, unbeknownst to myself. I wouldn't take home any 'Sushi-Grade' fish that wasn't frozen though


i get mine from a major fish distributor here. some of the other fish places i went to were like "sushi grade? whats that?" so i just slowly backed away and ran out the door. ive also gotten from the supermarket and frozen it, but its not as good.

Yeah there's really not many good places in ottawa to get fresh fish as a consumer, and the ones that there are aren't really up to par and are overpriced. I fish a decent amount in Quebec during the summer, but I'm pretty screwed for winter. I could go ice fishing I suppose but eh, friends alway go on the weekends, and I work all weekend long.

I'm not a glorified sous-chef lol... i'm executive chef.. i have a sous-chef.. but that doesnt really matter, i was just saying that as a reference that i know how to cook fish heh..
And i'm not generally a purist on food, but when it comes to sushi, i am, i don't know why, maybe cause i've been to Japan, where there is such a big culture/respect around sushi... to me sushi is a very special food...

I don't see the big deal with avocado's but Sushi is a very delicate dish. I don't know if I can make anything good. ^_^

are you asian or do you just have a legit wok laying around for stirfrys?

also, sushi in japan isnt as respected/traditional as you guys might think, theres places were you can get sushi by the plate thats like, the equivalent of McD's or Wendy's, maybe olive garden.
of course there are good places too, but its not all super-special all the time.

and for all the talk about good ingedients, poorer countries/people cant afford to eat the good cuts or buy the good fresh veg, so they become creative and find ways to make bad materials taste good; go to any older city and you can find these dishes labeled as street food or local delicacies. being a good cook means working with what you have, having great ingedients in a way, can limit you.

indeed, it has some religious/cultural connotations for them, from what i understand, although not all the time like winterschapel pointed out. the first time i made sushi, though, was when i was manager of a chinese restaurant. i had been watching the sushi guy and wanted to try it. at first he didnt want to let me, though, being a westerner. i finally prevailed on him, though, cause he liked me. i think i made a tuna roll with salmon outside. it came out quite nice, especially for a first try. (used to have a pic of it somewhere, cant find it, though.) he asked me who taught me to make sushi, so i told him he did. his response was "no lie! who teach you?"

nope, not asian, just have a wok. use it all the time, too, its great.
