how much are they in japan? they are so expensive in us!,

I'd recommend tojiro knives. prices are better than fair and they are quality.

thats my go-to knife, I have a cleaver and a yanagiba by them aswell. haven't disappointed me yet

For Matsumoto Tsukiji the prices are good for the quality. I guess average price for regular knife is around 150-200$, but varies .. i bought a nice petty for 75$. It's a small company, knives are hand made and they only sharp them on the giant stone at the store when you buy it. Matsumoto is actually a 150 years old company, but they split into 2 companies at some point. The other Matsumoto company has gone more mainstream, they are more available everywhere.
If you wanna buy japanese knives online i can recommend chefknivestogo.com , they have a great variety, you will need to do some research about them though.. they have the matsumoto (not the tsukiji though), they are great knives and really a standard for sushi chef in Japan.

thanks for the information, so no on knows about echefknife.com is good or bad?, or korin?

and you know the chef knife with end tip with 45 angle, is there certain way to use it?

im looking to spend around 500-700
bcz as the knife are better more skill you have to be cuts are way better

Little update for those who care... ive worked couple of places and realized all the highend restaurants in Japan make work their cook around 90 hours a week, all the time. Im 30 and married, so this is not for me. Maybe if i was 20 and single.. Also most of them wants you to work for free first lol... so yeah fuck that...
I will be going back to Canada in like 6 weeks... after that i will open my restaurant (never been owner before..)

pumpyourtank give me 800$ so i can go with my wife lol. As for the nigiri recipe, its no secret. However you need more then a recipe. Its really an art, every little detail matters, not something you learn in 1 week.. also Jiro will use the same ingredient as a cheap sushi joint to make their rice.. the difference is the quality . Jiro use one of the best rice in the world etc.. But anyway i wouldnt go to Jiro. Its way overprized. They are better options who are as good if not better for like 100$ cheaper.

are they paid by the hour at least? or all salaried?

what's it like opening your own restaurant? sounds like a lot of work :O

Salaried of course lol ...
It is a lot of work... especially in Quebec where im from, lots of paperwork and licenses i need to go get... I think it will be maybe 6 month work before i can open..
