6 ltre water
12kg pizza flour
500ml of ev oil
--mix
800ml of water
170g fresh yeast
500ml of ev oil
270g of salt
1 tbs of suger
mix
then add to the other mixture
for 10-15mins
site over night before use
cut roll out to the size you want,
300g for a big pizza
260g for small
before use site out for 15-30 mins
you should make about 75- 80 balls
