oh my father makes the type of pizza your looking for by hand... :(
too bad i dont talk to him anymore...
and i'mpretty sure he eye's the ingredients

but he does let the dough sit overnight.

My first attempt. Actually I'm quit happy with the result.
Pizza stone makes a huge difference..

I double the extremity but in the middle the dough is really thin

did you stretch the dough or used roller pin?

6 ltre water
12kg pizza flour
500ml of ev oil
--mix

800ml of water
170g fresh yeast
500ml of ev oil
270g of salt
1 tbs of suger
mix

then add to the other mixture
for 10-15mins

site over night before use

cut roll out to the size you want,
300g for a big pizza
260g for small

before use site out for 15-30 mins
you should make about 75- 80 balls
