So, all week I've been trying to toy around with food and ideas trying to come up with a menu. My goal is to open my own restaurant, and I'm not too far off in terms of the capital. :)

Simple late night snack : Linguine with rapinis and bacon.

Blanched the rapinis real quick in salted boiling water, then ive transfered them into cold water to stop the cooking process..
Used the water to cook linguinis, al dente ofc...
Cooked down some bacon cube (not the cheap sliced bacon type..), added garlic, chopped rapinis and red crushed paper at the end, cook it for another minute.
Put the pasta with some of the cooking water , mix together, finished it with fresh parmesan and a bit of olive oil.

I will have to share my broccoli rabe recipe too, it's pretty similar. It looks like mine has a little more pasta to broccoli rabe ratio, though.

I put it in the steamer and reduce down, I've never blanched it before, does it still hold it's bitterness? When I cook mine I like to get rid of the bitterness, and a big part of that is removing the stems (so if you're a little inexperienced and don't know the vegetable well I would recommend removing the stems for a less powerful flavor.

Got bored one day and decided to make some Chilli.

To be honest im not sure what measurements i put in, i always wing it when i cook.
for the most part though.

2lbs Ground turkey/beef
1b Turkey Sausage
6-7 Semi chopped garlic cloves
1can Drained red kidney beans
2 6oz cans of tomato sauce
1 10oz can of Ole da paso Mild seasoning mix
1 8oz bag of chilli mix ( something like Ol de paso )



Browned the Sausage/Turkey beef in a large pan, drained it after ofc
Then threw everything into a slow cooked on Medium heat for about 4 hours

I like the bitterness of the rapini, and yeah blanching em will remove a bit of it, but i really want to keep the veg as natural as possible. I've removed like 30% of the steams, they taste pretty good, i wouldnt want to remove them completly.
