Plates are around 25-35$.. plus tx and service so 30%.

those look like incredibly small portions for that money. or is that just the camera angle?

Well our fish are portionned at 7 oz and our meat usually at 8 oz... so i think it's ok.. also usually those portions are calculated so you have 3 courses + bread, so its well balanced.
And yeah i don't want my customers to feel too much full when they leave.. this is not some chain american restaurant...

Quebec pork in 3 ways ; filet cooked sous-vide, poached in butter and spices then seared, blood pudding, bacon slab cooked at 78.5 °C for 12 hours, parsnip purée, apple cider gastrique sauce.

Off our raw-bar tonight... live scallops from Québec, opened to order, served with a ponzu sauce (mirin,soya, yuzu, seaweed, dried bonito flakes), micro mizuna and tempura bits... one hell of a delicious bite..
